Today I'm giving you a great recipe from Shay's book Mix and Match Cakes.
It's perfect for a November gathering or Thanksgiving.
1 box yellow cake mix
2 small boxes instant vanilla pudding
1/2 C. vegetable oil
1 C. apple cider
4 eggs
1 C. applesauce
2 Tbsp. cinnamon (divided)
1 C. caramel pieces
1 C. caramel ice cream topping
1/2 C. butter, softened
1 C. powdered sugar
1 box of yellow cake mix
2 small boxes of instant vanilla pudding
1/2 C. oil
4 eggs
1 C. cider
1 C. applesauce
1 Tbsp. cinnamon
--Mix together above ingredients--
Add caramel pieces
Pour into bundt cake pan
Bake at 350 40-45 minutes.
Pull out of oven. Let cool 10 minutes and flip over.
I forgot to document the icing, but I definitely haven't become a pro at it yet.
My icing always seems to be runny, but I'm so afraid of it being too sugary.
For icing:
Mix 1/2 C. butter
4 C. powdered sugar
2-3 splashes of cider
Beat together
add 1 Tbsp. cinnamon
Spoon caramel ice cream topping on top of cake.
Add frosting on top!
I really need to learn the trick to the icing.
