Lemon Bundt Cake

I woke up on Memorial Day and was in need of something to take to a cookout that we had later in the day. 

The night before we played games with friends on the porch. 
It's great times like those that I cherish, but I couldn't make anything the night before. 

I got to thinking about what I had in the refrigerator and how many hours we had before we needed to leave. 

Earlier in the spring I made Shay's Lemon Bundt Cake. 
It was good, but I thought it was almost too lemony. 
So, I thought I would make her cake and add on a little fruit to offset the lemon taste. 



Items Needed:

1 Box Lemon Cake Mix
1 Small Box Instant Vanilla Pudding
1 Small Box Instant Lemon Pudding
1/2 Cup Vegetable Oil
1 Cup Water
4 Eggs

Mix together dry ingredients

Add in oil, water and eggs.

Mix together and pour into greased bundt cake.

Bake at 350 45 minutes
Remove from oven
Let stand 10 minutes in pan. 
Invert cake. 
Cool.

Icing:
1 Cup Powdered Sugar
1 TBSP. Lemon Juice

I ran out of lemon juice, so I improvised with milk. 
I mixed together an icing mixture of powdered sugar, milk and lemon juice. 
Drizzle over cake. 

Cut cake and place on platter. 
Quarter strawberries and garnish platter and slices of cake.

  1. Yum! I love lemon bundts- we made one a few weeks ago and it had vanilla pudding and sour cream. If it is overly lemon, you may want to leave out the 2nd pudding mix to see if that fits your taste buds a little bit better.
